Spring Awakening Smoothie (Pineapple, Kiwi & Spinach)

This vibrant, two-tone smoothie is like a sunrise in a jar — sweet golden pineapple meets fresh green spinach and kiwi in a refreshing blend that celebrates the shift from winter into spring. It’s the perfect transitional drink: rich in vitamin C from the last of citrus season’s bounty, and bursting with chlorophyll and fiber from new spring greens.
Simple, seasonal, and energizing, this smoothie brings together immunity-boosting fruits and iron-rich greens — ideal for gently waking up the body after the slower winter months. Pineapple supports digestion, kiwi brings brightness and vitamin E, and spinach replenishes iron and folate for that extra spring spark.

Ingredients for 1 glass:
1 cup fresh pineapple, chopped
1 ripe kiwi, peeled and chopped
1 large handful of fresh spinach
1/2 cup water or coconut water
Juice of 1/2 lime (optional, for brightness)
Step-by-step cooking process:
Blend the base. In a high-speed blender, blend pineapple and kiwi with half the liquid until smooth. (You can also blend each ingredient separately - like I did!) Pour into your glass first for the bottom layer.
Blend the greens. Rinse the blender and blend spinach with the remaining liquid and lime juice. Gently pour over the yellow layer to create a beautiful two-tone effect.
Serve immediately, garnished with a slice of kiwi or edible flowers if desired.
